Today was your typical Sunday afternoon.
Nothing out of the ordinary going on around here.
Just your average, everyday kind of stuff.
I'm sure you all do the same things on Sunday afternoons!
It's okay to admit it. We won't judge you.
Today's recipe was given to me by my awesome friend Michelle B., who is a pretty amazing cook. We've eaten dinner at their house several times and I've never once eaten anything I didn't like!
We brought her cookies this evening so I had an excuse to drool over her new baby, and I was secretly dreading it. She makes the world's greatest cookies so I hoping we'll still be friends after she tastes mine.
Anyway, this is ridiculously easy and SO good! My kids will even eat it and Alayna LOVES it! It takes less than half an hour from start to finish.
Saute' in a little water for about 5 minutes over medium heat:
1 bunch green onions, thinly sliced
1 (4oz) can mild green chiles
1 can pinto beans
1 can black beans
1 can kidney beans (drain and wash only these)
1 can stewed tomatoes
1 can corn
1 can water
1/2 packet of taco seasoning
1 pound cooked ground beef (I usually cook it up while I'm making up the rest of the soup. And the soup tastes awesome without it if you're not a meat person)
Simmer for 15 minutes over medium-low heat.
Add 1/2 a packet ranch dressing mix.
Mix and enjoy!
Serve with sour cream and corn ships. Yummmmmmmmmmm!
And I just have to say, I love that I'm still getting feedback on several of the recipes! Even variations on them! So be sure to check out the comment sections of the recipes to find out people's opinions!
