Winners (and my New Year denial)

I will say however, that sometimes my kids think I'm down-right awesome.

I bet if you wore a tutu, your kids would think you were awesome too.

Just sayin'.

I've decided that I'm in denial.

It's not January yet, nor is it a new year. It is still 2012 and the rest of this week is December.
I have not decided on anything that even remotely resembles a resolution, nor have I suddenly decided that starting on January 1st, I would become this whole new and better person.

Been there, tried that, and I am living proof that it doesn't work for me.

First of all, there is far too much junk food left over in the house from the holidays,
school started back up today, which in case you hadn't noticed, is the middle of the week.

Just call me Captain Obvious.

It seems to take a couple days for everyone to get back into the swing of things.

The whole "choose one day to change my whole life" is totally unrealistic for me.

Do I have plans for the new year? Oh ya. But I plan on spending the rest of the week planning baby steps to obtain my goals.

So while I try and finish up editing some 200+ Christmas photos so I can share, I'll also be putting together a new "responsibility" system for my children, and try to decide the best way to incorporate a better cooking system. I have not been in the mood to cook for ages.

And I'm getting really sick of frozen pizza.

So, if anything, I guess you could say my New Year's resolution, is to plan my resolutions and actually write them down.

The what.
The when.
The how.

I always stop with the "what" and so I never really get it done since I never write out the "when" and the "how".

I hate cooking... a lot, and it seems like I am always getting stuck in a rut of foods. So I have three 8 week meal plans that I came up with. Grocery lists (with average prices), menus, nights off (frozen pizza, take out, etc) and recipes all in one. If I am in a rut I pull out one of those bad boys and use it, sometimes I use all three and then just start over in the rotation, sometimes I will throw in a week here or there where I don't use any of them. I am just starting a new list for this year... 12 dinners down 44 to go... and by the time I finish I am guessing my beginning of the year resolutions will begin to wane.

Wow! Good for you! That really is great!

I have a two-week menu planning schedule and it works really well. My issue boils down to the actual cooking part.

I just don't want to do it! So I put it off and put it off... pretty soon it's dinner time, everyone is starving, and all my meals take a least an hour to make!

So I gotta come up with a plan....

Me too! School starts up for us on Monday, so that is the new year for me. I'm working on my goals with the what when and how. I think we must have been on the same wavelength today...

First turn on the radio (I like Public Radio because then I have something to talk about at the table).

Quiche for Dinner:

Grate a generous cup of cheddar cheese
Fry 4 strips of turkey bacon till nice and crispy
cut up one green bell pepper (any color is okay).
crack 5 eggs
mix eggs with 2 1/2 (or so) t of garlic powder and 1 t of salt
mix in the cheese, crumble in the bacon and add the bacon fat, and the bell pepper

roll out the pie crust and place it in the pie pan (I use the kind that you buy pre-rolled from the store).
on top of the pie crust put 3 slices of pepperjack cheese
pour in the egg mixture
take another couple of slices of pepperjack, tear them up a little, and place them on the top of the quiche

bake at 375 for about twenty-five-ish minutes (I think...keep checking on it though, you'll know when it's done...it will look done) Sometimes I am on top of things and set the table or do dishes at this point. Sometimes I collapse on the couch and whimper. Either is okay since the oven is doing its magic.

That is it. It can be made without the bacon if you want. It is good with hot sauce. Jason ate his with sour cream.

Serve with a fruit smoothie and baby carrots and OMG you just made dinner balanced.

Serene, I'm not even you kid, and I think that you are totally awesome. If you figure out how to get out of the cooking funk let me know. I've been stuck in that trench forever and can't quite get myself to even try to pull out of it.

I love your blog and love that you share your honest thoughts about parenting, etc! We are in the same boat, it's nice that others go through all of this too! I would love to hear about the "responsibility system" that you are planning - always looking for good ideas in that department!
