Recipe Round-Up


It's been ages since I did a recipe round-up! That's the thing with me, I'm terrible at consistency. I know, I know, I should just get a t-shirt that says, "Captain Obvious".

I always start something with the intention of maintaining consistency, but alas, it always falls apart in the end.

Like the whole, "do just one full load of laundry a day to keep up with it" concept. Yea... good intent, lousy follow-through.



Anyway, here are a few pinterest recipes we've tried out around here.

Remember, these are just my family's thoughts. You may love a recipe that we didn't care for, just like you may hate a recipe we loved.

Chicken Alfredo and Rice Casserole

Hubby and I LOVED this. It was so yummy and pretty quick and easy. This recipe will for sure become a regular visitor around here. The kids ate it pretty well, which surprised me. They are kind of anti-rice for some reason, but like I said, they ate this just fine! 

ALTERATIONS: I did use the "boxed with a flavor packet" wild rice. That may have been one reason we liked it so much, the rice was delish! Also, I didn't care so much for the bread crumbs on top, it seemed to dry it out. I think I'll half that next time I make this.

Baked Potato Soup

I actually doubled the recipe when I made this in an attempt to use up a bunch of our potatoes. I was a little bummed when I tried it and thought it was just okay. Not bad at all, just... okay. The kids thought it was just okay too. But Hubby really, really loved it! He ended up eating ALL the leftovers himself! So I guess if you're looking for a Hubby pleasing recipe, I would suggest trying out this one!

Chicken Corn and Black Bean Quesadillas


The kids didn't particularly love these, but Hubby and I sure did! With all the spices mixed in with the food it was SO good! This is definitely one to try! Next time I'll just make these up for us adults and the kids can have regular cheese quesadillas.

Did I ever tell you about the time Hubby and I went on a date (pre-marriage) and he took me to Cafe' Rio and I felt so guilty about him paying for my dinner that I actually ordered a kids cheese quesadilla? Yea... anyway....

Chicken with Artichokes and Angel Hair


I confess I wasn't quite sure if we were going to like this dish or not but surprisingly, all of us, even the kids, loved it! I know right? So weird. But it's true. I even made a recipe and a half of it and just put it all in a big 9x13 casserole dish. It didn't last beyond the next day's lunch. It was really good.

It does take some time and I made quite a mess, I even just used regular spaghetti instead of the angel hair pasta, but it was worth it.

Queso Blanco Dip

So, I feel really bad about giving this recipe a bad review since the blogger seemed so excited with her success. But truth be told, no one, not even my kids like this dip. Perhaps it's just because we never buy american cheese, but no one liked the flavor. The american cheese taste was just so overwhelming and it was so... artificial tasting. Perhaps if it was made with a mixture of different cheeses it would taste better but with the straight up american, this is not for my family at all.

I'm definitely going to post a "Tried and True" recipe one of these days. I have several lined up on Pinterest. I love that place. Easy to keep stuff in one spot.
