Cafe Rio Recipes - Part 2

I'm excited, are you excited? Cause, I'm way excited.

Yummy food is just exciting.

Okay, where were we before we got all caught up in the exciting.

Ah yes, recipes.

Sweet Lime Cilantro Rice 
(slightly altered from the version found in "The feel Good Cookbook" by Jonell West Francis)

1 quart vegetable or chicken broth
2 cups rice
1 teaspoon salt
2 tablespoons lime juice
2 tablespoons mayo
2 tablespoons honey or brown sugar
1 tablespoon cilantro

Stir ingredients together and cook according to the directions on your rice cooker, or bring to a slight boil then cook on low for 20 minutes on the stovetop. (unless you use brown rice then it would be 45 minutes)



Creamy Tomatillo Dressing 
(slightly altered from the version found in "The feel Good Cookbook" by Jonell West Francis)

1 cup Ranch dressing
1 (12 ounce) can tomatilloes, drained
1/2 bunch cilantro
dash of cayenne or hot pepper sauce (optional)

Puree in your blender and, wa-la!



And now, to put them all together!

For a yummy, delish Cafe Rio Salad:

Place a warm tortilla in a shallow bowl. Fill in this order: sweet pork, black beans, rice, chopped romaine lettuce, dressing, and cheese. Garnish with fresh chopped tomatoes, cilantro, crushed corn chips, and guacamole if desired.

For a Cafe Rio Burrito: 

Fill warm tortilla with sweet pork, black beans, rice, and cheese. Roll into a burrito and top with cheese and more dressing.

Thank you Thank you for the rice recipe. I love the sweet rice, but the spanish rice... not so much. This will be perfect, because even my husband will eat it:)

shoot - I used to have the BEST cafe rio knockoff salad recipe... but one of the seasonings is now so hard to find that I think they've taken it off the market... boo!

essential toppings for my salad are almond slices and craisins.

Also, it can't just be any warm tortilla... I don't settle for less than the flour tortillas you can buy in the refrigerated section at Costco or Walmart that are in dough form and you cook them yourself on the stove. SO MUCH BETTER THAN THE PRE-COOKED TORTILLAS!!

I've used both, and they both work and taste great. I will often use brown sugar over honey, simply because it's cheaper. :D

Cilantro Lime Dressing
1/4 C. lime juice
2 TBL vinegar
1 TBL brown sugar
1/4 tsp salt
3/4 tsp minced garlic
3/4 tsp spicy brown mustard
3/4 C. oil
1/2 bunch cilantro
Blend in blender/food processer. Refrigerate. Mmmmm!

We've always used the recipes here: http://www.favfamilyrecipes.com/2007/11/jared-and-i-love-cafe-rio.html. They're pretty involved, but so yummy! I made the pork two Sundays in a row because I was craving it so bad!

This is now my favourite chicken recipe! It is so simple to make, & is absolutely scrumptious!!! Make sure you prepare four times as much, because you won't be able to cease eating it!
