Poor Bishop, I owe him a Santa Fe Casserole.

I meant to post this yesterday but my brother is living with us for a week while he is in between apartments and school semesters. So instead of blogging we spent the day sleeping, eating, and talking.


Of course, by 11:30pm I was getting a little slap happy. If you've never seen me slap happy, count yourself among the blessed of the earth. I mean, there's really only so many times you can laugh hysterically at an inside joke that involves the phrase, "Xerxes, POW!" 


For your own sanity's sake, I wouldn't ask. Trust me.

So today, you're getting yesterday. So really, you're still a day younger!

Because my blog can do that.

Preface: Jacob, my soon-to-be three-year old son is going through a phase. A phase that involves a lot of screaming, crying, and inserting of all five fingers into his mouth to suck on.

Gross.

And as much as my children LOVE going to church, as evidenced by the fact that the boys screamed at the top of their lungs in perfect harmony all the way there yesterday, they do like to fight over who hands our tithing slip to the Bishop.

Story: A couple weeks ago, Luke gave Savannah our tithing envelop and told all three of the kids to go together to hand it to the Bishop. So while the three of them were doing that, I was picking up crayons, books, papers, and bottles.

Suddenly Luke starts gwaffing and laughing! Quizzically I looked at him like he had just lost a marble. So he filled me in.

"You know how Jacob has been sucking on his fingers lately? Well the Bishop was shaking all the kids hands so Jacob took his fingers right out of his mouth and plopped them in the Bishop's open palm for a nice, wet handshake."


I think I'm going to owe the Bishop cookies for a month! Poor guy. After that experience, I believe the man automatically obtained exaltation.

And with that lovely story in mind, here is the recipe for the week which is normally posted yesterday but since today is yesterday, here we go. And because I know you're all so very hungry now.

This is one of my FAVORITE dinners. It's only been a recent discovery but has made it's way into our bi-monthly list of recipes. Yum yum yummy!

Santa Fe Casserole Bake

1 lb lean ground beef
1 package taco seasoning
2 cups water
2 tsp. chicken boullion
1/4 flour
1 cup sour cream
1 can (7 oz.) dices green chilies
1 package (11 oz.) tortilla chips
2 cups grated monterey jack OR cheddar cheese
1/2 cup sliced green onion, including tops.

In medium skillet, brown meat until crumbly; drain fat. Add taco seasoning and blend well. In a small bowl combine bouillon, flour and water. Add to meat mixture; bring to a boil to slightly thicken liquid.


Stir in sour cream and green chilies; blend thoroughly. In lightly greased 13x9 baking dish, place 1/2 of the chips. Use a cup to slightly crush down flat.


Top with 1/2 of beef mixture, 1/2 of cheese and 1/2 of onions. Layer again with remaining ingredients, ending with green onions. Bake at 375 degrees for 20 minutes.


Then eat like the sour cream and cheese will only make you thinner! Yummmmm....

Oh, I used to make something like that when I was single (stopped making it since picky hubby didn't like it), but mine didn't have green chilies. Sounds even better with them.

What--you don't stick your whole fist in your mouth? Is that not a normal thing for people to do? Should I not be doing that to show off to others?

Man--I KNEW there were bigger reasons to why I'm still single....

Does he answer his cell phone when you call or is your cupboard still ringing?

My family has so many hilarious (to us) inside jokes that when we get together we can laugh for hours on pure nonsensical phrases.

Lastly, if it helps you feel better, mt kids puked on the bishop once and gave him the stomach flu. I didn't even make him a casserole as an apology.

Don't worry--any bishop worth his salt has a big old bottle of Purel in his office and knows how to use it.

hahaha.... I guess its okay with the bishop to have a wet handshake from a kid, and not from an adult..... haha

That's funny about the kids and paying the Bishop.

I am the finance clerk and a couple weeks ago some guy paid $1,000 in tithing in ONES. AND he didn't put the amount on the slip so we had to count it all. I was there for an hour.

Have your kids pay their tithing in all pennies. Finance clerks love that.
