T.B. and Hawaiian Chicken

T. B. stand for "tired bum", just so you know. That's what you get when you drive for hours! And since my mom taught me not to say "butt" (psst... here's a secret, I still do when the occasion calls for it) the official terminology around here is "bum". 

So we are back from Utah, the kids are in bed (and so is my husband) and I'm sitting here sucking on a spoonful of leftover cream cheese frosting while typing up this wonderfully healthy recipe and thinking that I should start working out tomorrow.

But the cream cheese frosting devil is wresting with the cucumber angel over whether I should or not. Whoever wins is my boss for the week. 

Its a tough battle and its getting ugly. Cream cheese frosting devil fights pretty dirty. Honestly, I'm not sure who to root for.

Just in case you missed the memo, I'm going to post a recipe every Sunday so if you just don't care for that stuff, you can skip out on reading Sundays.

If you decide to do that I just want to tell you not to worry about me. Your absence will only drive me to sucking my thumb in the corner while hiding under a blanket as I listen to "True Colors" by Phil Collins. I'm sure the damage will be temporary... I hope.

So, today's recipe is a FAVORITE of my husband and my brother who is on college who liked it so much he decided to show off by cooking it for a bunch of people. Of course, he was really just cooking it for a girl who, in the end didn't even come.

I know, totally lame right. She has no idea what she missed out on! The only thing I ever saw my husband cook in college was spagetti and grilled cheese sandwiches.

Anyway, the recipe comes from, The Feel Good Cookbook. It is an amazing book full of healthy recipes (lots are gluten and/or dairy free). I cook from it quite often. It's one I would definitely recommend.

This is not a quick, throw together recipe but we like it so much I'm willing to go trhough the extra effort.

So give it a whirl and let me know how it turns out!

NOTE: The recipe as seen in the book is in black and any of MY changes or notes are in red.

Hawaiian Chicken

6-8 chicken breast halves, butterfly cut for thinness
1/2 cup whole wheat flour or white flour
1/2 teaspoon of salt

1/2 stick butter
1 tablespoon olive oil

Sauce:
1 (20 ounce) can pineapple chunks, reserve liquid (crushed pineapple works too, no need to separate the liquid)
1/2 cup honey or brown sugar
2 tablespoons cornstarch
3/4 cup apple cider vinegar
2 Tablespoons soy sauce
1/4 teaspoon ginger

1 green bell pepper, cut into 1/4" strips

Heat oil and butter in pan. Roll chicken pieces in flour and salt mixture and brown in butter over medium heat.


Blend all but drained pineapple chunks and green pepper. Arrange chicken, peppers and pineapple chunks in casserole dish. Pour sauce over and bake uncovered at 375 degrees for 40-45 minutes until done. Serve over warm rice.


I made this batch with crushed pineapple, in case you were wondering.

Yummy! You know what else is yummy? The cream cheese frosting on graham crackers. Glad you're back safely.

Oddly enough, I do feel at peace knowing your pineapple was crushed.

I have chocolate frosting in my fridge. It makes me happy at least twelve times a day.

Sure looks yummy! I wish my husband liked pineapple in his main dishes. I've made a few similar to this and he doesn't like the pineapple. Crazy!

I would've eaten cucumbers with Italian dressing and chased them down with cream cheese frosting. That sounds so good.....

Printed and on the menu for Friday...modified and hoping it is just as good in a crockpot!

Stew Meat & Soup was was Monday's meal and it turned out perfectly in a crockpot.

Love new recipes to try! I had planned this one for last week and didn't get to it. Friday after work we were walking in the door and my husband asked what we should make, but I told him I was exhausted and didn't feel like cooking. I was going to reheat leftovers... but SuperDad came to the rescue, noticed your recipe I had printed out, asked if we had all the needed ingredients, and proceeded to make dinner while I played with the baby. He is awesome, and your recipe is awesome. I knew he'd love it (pineapple is his all-time favorite food), but I was actually surprised how much I loved it. This one is definitely going into the monthly rotation, thank you!
